Food Waste Originated Material as an Alternative Substrate Used for the Cultivation of Oyster Mushroom (Pleurotus ostreatus): A Review

Pleurotus ostreatus (P. ostreatus) is considered a high-quality food, rich in proteins and bioactive compounds important for maintaining human health. Lately, commonly used substrate oyster mushroom cultivation—wheat straw, more often replaced by alternative cellulose substrates originated from the agricultural food industry. Utilization of wastes cultivation has its added value: sustainable waste management, production low quality waste, as well solving environmental, economic global issues. This overview covered three categories waste: food-processing wastes, agro-cereal nut–fruit most P. period 2017–2022. Analyzed studies mostly productivity chemical characterization before after process, morphological characteristics fruiting bodies cultivated on specific substrate. Chemical analyses mushrooms are not adequately covered, which gives room additional research, considering influence type composition.
